The only thing we love more than getting ready for our next South East Queensland camping trip to Murphys Creek Escape, is planning out all our delicious camping recipes for the camping trip! Plenty of people think that camping means skipping out on delicious meals and having to stick with super bland and plain food. After more than our fair share of camping trips, we’ve discovered that this is far from true. The reality is that Aussie camp cooking can be just as exciting, just as tasty and even more fun than cooking at home!
Here are some of our favorite Aussie campfire recipes:
1. Campfire Scrambled Eggs
We all know that breakfast is the meal for champions and it’s extra important to fuel up with a good meal in the morning when you’ve got a big day of adventuring and exploring ahead of you! We’ve taken the crowd-favorite scrambled eggs and given them a camping twist! This is a super simple way to ensure you get cloud-like eggs, every time!
Ingredients:
- Eggs
- Water
- Butter
These ingredients are all in a 1:1 ratio. For every egg, add 1 tablespoon or water and 1 tablespoon of butter.
Directions:
- Add all your ingredients to a saucepan. Yep, you read that right. Forget about using a pot or a frying pan, the saucepan is where the real magic happens!
- We like to keep all the egg yolks unbroken at first but don’t stress too much if one breaks while cracking!
- Mix the ingredients together gently, getting the egg whites and water to mix. Then put the pot over the fire.
- Once the eggs start to get warm, break the yolks and get the eggs all mixed together.
- Once the butter starts to melt, take the pan off the heat and keep stirring. You want to keep taking the eggs off the heat and then back on again to ensure the slow heat keeps the butter melting without cooking the eggs too much.
- When all the butter has melted and mixed together, take the eggs off the heat and let the residual heat of the pan take your eggs to perfection.
P.S You can cook your eggs at home like this too! Once you try them, you’ll never want to cook them any other way.
2. Double Baked Potato Boat
You’ve spent the day exploring the beautiful area surrounding Murphy’s Creek Escape and you’re heading back to the campsite for a chilled afternoon. The first thing you’re going to want to do when you get back is tuck into a hearty meal. Forget about hours of preparation or having to bring 101 different ingredients with you. We’ve got the ultimate recipe that is super simple and even tastier.
Ingredients:
- 3 pre-baked potatoes
- 9 strips of cooked bacon
- Cooked ham
- Sharp cheddar cheese
- Stick of butter
Directions:
- Take three pre-baked potatoes from home and cut them each five times. Do not cut them all the way through, but into 6 equally sized segments.
- In each segment, add a small piece of bacon, ham and cheese.
- Lay each potato out on its own piece of aluminum foil and spread butter across the top of each potato
- Seal the potato in the aluminum foil and cook in your grill or on the fire for about 20 minutes.
If you’re cooking in your fire, our top tip is to count the number of potato’s going in and coming out. It’s surprisingly easy to mistake them for darkened coals!
3. Beer Fried Fish Fillets
This could just be the world best combination. Our beer fish fillets are lightly fried and perfectly golden, making them an absolute crowd favorite for the entire family. The best part is that you’ll have a drink to sip while you cook! Talk about winning.
Ingredients:
- 500 grams fish fillets (use 500 grams for every 2 people)
- 1 cup buttermilk pancake mix
- 1 cup beer
- 1 cup flour
- ¼ cup cooking oil
Directions:
- Open your beer and take a sip
- Now you’re ready to heat the oil while you finish preparing the fish fillets. If you’ve caught the fish fresh, it will need to be cleaned and dried. Alternatively, you can buy it from the store before you arrive and have it ready to go.
- Once the fish is skinned, cleaned, de-boned and dried, it’s time to cover the fillets in flour. Ensure the flour evenly coats the fillet.
- Mix the pancake mix and ¾ cup of the beer with a fork until it is smooth. The rest of the beer is for you to enjoy while you’re cooking.
- Take the floured fillet and dip them until the batter until they are evenly coated
- By now, the oil should be hot and ready to go! Put the fish fillets into the oil and cook until the outside is golden, brown and delicious. Once the outside is finished, the inside will be nice, moist and shiny.
- After cooking, let the fillets drain on a paper towel.
- Serve with a little dill, pepper or lemon – or just by themselves!
4. Dutch Oven Pizza
A Dutch oven is every campers’ best friend! It’s a great and effective way to cook just about anything you’re craving and keeps the mess to an absolute minimum too! One of our favorite things to cook in our Dutch oven is a pizza, because who doesn’t love a pizza night with the whole gang?
Ingredients:
- 1 pizza crust
- 1 can tomato sauce
- 1 cup cheddar cheese
- 1 cup mozzarella cheese
- 20 slices of peperoni
Directions:
- Let the dough cook for about 5 minutes in your Dutch oven, before taking it out to add the rest of your ingredients
- The first layer should always be tomato. We find that a little bit goes a long way so try not to use too much. You can also substitute the tomato sauce for alternatives such as Buffalo Sauce, Barbeque Sauce or even Chilli Sauce.
- Next up is the cheddar cheese. Spread this out evenly across the pizza so that you’ve covered the entire base.
- We prefer our pepperonis not too crisp, so we like to add them next week. It’s important to keep them flat so that they cover as much space as possible.
- Now add the mozzarella!
- Put your Dutch oven onto the coals and place the lid on, with five or six coals on top of the lid – this ensures the pizza cooks on both sides.
- Keep the Dutch Oven on the coals for about 10 minutes before take it off and letting it cool down.
- Tuck in!
Like any pizza, you can use as many or as few ingredients as you like! We keep things super simple with our pizza so that we don’t have to pack extra ingredients, but feel free to splash out and get creative with this one!
5. Grilled Banana Boats
Dessert while camping? We’ve got you covered. The little ones are going to love you for this one. You can thank us later!
Ingredients:
- 2 bananas
- ¼ cup chocolate chips
- ¼ cup mini marshmallows
Directions:
- Slit each banana longways through the peel. Be careful not to cut all the way through though!
- Stuff both bananas with marshmallows and chocolate chips through the slit
- Wrap the bananas in aluminum foil and cook over a fire or on the BBQ for 5 minutes or until the chocolate is melted.
- Eat with a spoon!
6. BBQ Skewers Recipe
Ingredients:
- For the Skewers:
- 1 lb (450g) chicken breast or beef steak, cut into bite-sized cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into chunks
- Cherry tomatoes
- Fresh mushrooms
- For the Marinade:
- 1/4 cup olive oil
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tbsp honey or brown sugar
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- Additional Items:
- Skewers (wooden or metal)
- BBQ grill
Directions:
- Prepare the Marinade:
- In a bowl, whisk together the olive oil, soy sauce, lemon juice, minced garlic, honey or brown sugar, smoked paprika, dried oregano, salt, and pepper until well combined.
- Marinate the Meat:
- Place the chicken or beef cubes in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the meat, ensuring all pieces are well coated.
- Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.
- Prepare the Vegetables:
- While the meat is marinating, prepare the vegetables by cutting them into bite-sized pieces.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- Assemble the Skewers:
- Preheat your BBQ grill to medium-high heat.
- Thread the marinated meat, bell peppers, zucchini, red onion, cherry tomatoes, and mushrooms onto the skewers, alternating between meat and vegetables.
- Grill the Skewers:
- Place the assembled skewers on the preheated grill.
- Cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and the vegetables are tender and slightly charred. The internal temperature of chicken should reach 165°F (75°C), and beef should reach your desired level of doneness (145°F/63°C for medium-rare).
- Serve:
- Remove the skewers from the grill and let them rest for a few minutes.
- Serve the BBQ skewers hot, either on their own or with your favorite dipping sauce, salad, or side dish.

7. Campfire Damper Recipe
Ingredients:
- 3 cups self-raising flour
- 1/2 teaspoon salt
- 1 cup milk (or water)
- 2 tablespoons butter (optional)
- Extra flour for dusting
Directions:
- Prepare the Dough:
- In a large bowl, mix the self-raising flour and salt.
- If using butter, rub it into the flour mixture with your fingers until it resembles breadcrumbs.
- Gradually add the milk (or water), mixing with a wooden spoon until the dough starts to come together.
- Knead the Dough:
- Turn the dough out onto a floured surface.
- Knead the dough gently for about 5 minutes until it is smooth and well combined. If the dough is too sticky, add a little more flour.
- Shape the Damper:
- Shape the dough into a round loaf or a log, depending on your preference.
- Dust the outside with a little extra flour.
- Prepare the Campfire:
- Ensure your campfire has a good bed of hot coals.
- If you have a camp oven (Dutch oven), preheat it by placing it in the coals for about 10 minutes.
- Cook the Damper:
- Place the dough on a piece of foil or directly in a preheated camp oven.
- If using foil, wrap the dough loosely to allow it to expand.
- Place the wrapped dough or camp oven on the hot coals.
- If using a camp oven, place some hot coals on top of the lid to ensure even cooking.
- Cook for about 30-40 minutes, or until the damper sounds hollow when tapped and has a golden crust.
- Serve:
- Carefully remove the damper from the campfire.
- Allow it to cool slightly before slicing or breaking it apart.
- Serve warm with butter, jam, or golden syrup.
